No Cow Died For This

I died for this.
"Beef" Stroganoff, hold the beef.
It is entirely possible. Tastes as good as the real thing. That's what mushrooms are for: fake meat umami and a little texture.
Not gonna bother you with recipes and proportions and flavorings (hot smoked paprika). Just use your usual version, and leave out the cow.
You will be so amazed, really.
Your gut will thank you, too.
Can I get this to go viral on YouTube? It is that good.

Yes, actual sun! Imagine that!

Stroganoff without the beef tenderloin - sounds all wrong and yet so very right. I'm going to try it.

YUM, 'shrooms!

I like the mushrooms!

Mouse: I should have mentioned that there were some chanterelles mixed in with the buttons. :)

That umami paste strikes me as very silly. Anchovies and porcini in a tube.

Greg: I always make this dish with fungi, but this time, just increased the amount.

When you leave out the cow does that include the sour cream too? I am amazed, really. This kind of reminds me of the Tofu turkey that was at the Marin market. You had to ask yourself, why bother?

Chilebrown: Let me tell you about cows. They don't die when you milk them. Of course we used sour cream! ;)

Mouse : I bow my head in a reverential moment for the 'shrooms and laugh out loud.
