No! She Didn't!

My tongue is still burning. In that good, junk-food way.
Close your eyes, all you purists and phonies. This is eatin'.
Macaroni and cheese with a buttered crushed Doritos topping.
I can't really give you a recipe (and I imagine you wouldn't want one), but I just made my usual mac 'n' chee, jacked it up with a touch of cayenne and dried garlic (gotta be dried) to mimic that Doritos flavor. The topping was one of those small 99 cent bags, whirled in the blender and then sizzled briefly in butter.
Assemble this holy terror and bake as usual.
The crumbs darkened and the smell of ... buttered Doritos ... filled the house.
Was it good eating?
I just did it for a lark, but I'll probably do it again.

Just had a flashback to a childhood memory -- tuna casserole containing a bag of crushed Lay's instead of noodles and topped with some whole chips and cheddar. Haven't had the stuff in at least 25 years but now I suddenly want it.

Kailyn: Big Fat Bingo! I kept thinking of that exact tuna casserole the whole time. It was the only version I knew as a child (but no cheese on top). Tried it years later; too salty. Wasn't it cool how the chips rehydrated and came out looking like potato slices? Food is funny.

Waitaminit: the one I remember was tuna with noodles, a can of cream of mushroom soup, and crushed potato chips on top.

I thought this the end all-be all of fine dining because I ate it in my aunt's house in the big city (Atlanta). We probably had her famous "salad" of a lettuce leaf with two rings of (canned) pineapple and a dollop of mayonnaise along with it.

When (if) you get around to a good mac and cheese casserole, use the recipe in my SUN feature this week, a real keeper.

My MIL used to make a chicken/crab white sauce thingy with crushed crisps on top!

This is exactly the kind of food we always wanted as children and our mother refused to make. I think I'll relive my childhood soon, and remake it the way I always wanted it with this as the centerpiece. Kudos on the Doritos idea!

Kudzu: Yes, that's the classic, but for a while, the potato chip company was pushing this version with no noodles at all. Oh, yes, there was the can of soup.

Kudzu: I saw your mac 'n' cheese recipe. Lovely, creamy. Looked a little complicated, step-wise, so I just made a rich mornay sauce and swirled it through the elbows, as usual. (But... mac 'n' cheese custard? swoon.)

Mouse: Chicken/crab! Oh, that's too fancy for this crowd. Thank goodness she ruined it with the crisps on top.

Zoomie: Cranky and I have been reliving childhood foods. It's fun and nobody can tell us not to!

Tom's mac-and-cheese recipe does have more steps than usual, but that's the point: he shows us how to keep it from becoming a sort of block of glop (however tasty) and encourages the use of crunchy over creamy -- your obvious choice, too. I wasn't chiding, just sharing!

Funny: this is the time of year when I start craving kid foods, too.

Is there something in the air or what? I made a tuna noodle casserole this week, topped with crushed potato chips. I ate every bite, reveling in the decadence (to me) of double carbs - noodles AND potato chips. I'll be saving that Mac and Cheese recipe for colder weather but I think I will go back to the potato chips. Salt and Vinegar are my favorites and adding that to a creamy Mac and cheese, zapped up with some Siracha -- well, that's my idea of cold weather bliss.

Nancy: Total coincidence, but interesting! In fact, it just turned seriously warm in Marin, so comforting casseroles are off the menu again. Heh.

Denise: I went off Doritos too, while avoiding wheat. My first taste after a year? YECCHH. But, one does miss one's silly old habits.
