I know. It's succotash. Such a filthy word for a food kids won't eat. Goulash, that was another. And there were even kids who wouldn't eat eggplant because the name was so stupid!
Gosh, Cranky and I must have been together for years before I found out he liked lima beans. I love lima beans! But I had kept them off the menu because I was the only person I knew who liked them. He likes them!
We have one or two or three ways we enjoy limas, and one of them is succotash. Corn kernels, beans, and... Hm, what's that creamy-looking sauce? Neither of us can remember, but it's probably a little mixture of cream and soft white cheese stirred in, to melt in the warmth of the veggies. A non-kosher embellishment, and yum.
You could eat this with a blindfold on, without knowing its hideous name, and you'd probably love it.
But you're not going to, ya wuss.

As a kid, I have bad memories of the frozen succotash that came in the small box . I think it was a texture thing. I still will not eat eggplant. Eggplant is such a pretty vegetable. Maybe that texture thing still haunts me. Bacon is my go to vegetable.
Like Chilebrown, my succotash came from a small, frozen box. Ugh. But made fresh, now you're talking! No eggplant, thank you very much.
Chilebrown, you can't fight texture issues. No matter how much I adore limas and eggplant, you don't, and that's fine. I'm no missionary trying to convert you. :) I have a blog friend who can't stand raw tomatoes because of the texture. I guess it makes her feel like she has somebody's tongue in her mouth... and what's so bad about that?
Zoomie, yeah, I guess that's how my mom bought succotash, too. Frozen, at the commissary. Even today, limas are ONLY frozen. Still like 'em.
Eggplant is a no no for you, too? The Chinese love those slippery foods, like eggplant and shark's fin. I've never had shark fin, but I sorta wish I'd tried it before it became illegal. Not that I have a problem with banning it, poor sharkies.
I wonder if freezing limas makes them softer/easier to cook? You're right, I've never seen them except frozen... Maybe Kudzu has made them from scratch? I think of them as southern...

Zoomie, I'd like to find some fresh, raw, but it doesn't seem to be a local crop. Chilebrown would argue that I could use favas, but he knows I'd resist. :)

I love any and all vegetables, including the lowly lima. The spouse won't touch 'em. If he's around for succotash I use favas or edamame.
UC: Edamame sounds like a perfect substitute!
How did limas get such a bad reputation? They are either truly gross to many people, or they got a hideous mythology going on. Fine, more for us.
