One Potato

It seems so obvious, but it was something I had never tried.
Roasted potatoes and olives.
If you Google it, it exists. Abounds. Varieties galore, I would imagine, but I didn't explore deeply. Just wanted confirmation.
This made-up version used garlicky (pitted) green olives. There were little garlic cloves bobbing about in the olive brine, and we roasted them too. I would call this important.
What else? Good olive oil and a shower of thyme leaves.
So easy. So good.

Greg: Yeah, it's really tasty, and a cinch to make. The secret is good ingredients.

Potatoes are a good stabilizer and mood calmer as well. We certainly need that today - and adding olives. A touch of genius - *I* never thought of it. I'd added just about everything else, excluding the kitchen sink - but never olives.

You left out the most important part! Homegrown! That reminds me - I have a little potato plant growing in a pot out on the front steps. Must go dig a little a check on how it's doing. Mine are never very big but there's something about taking them thankfully out of the ground just before cooking...

Zoomie: And it's from the taters we planted there a few years ago. If you don't get them all dug up, you are going to have a new crop! So convenient.
I think container-grown potatoes are quite successful. Dig in!

I would have to modify this by using shallots and perhaps a tiny bit of minced rosemary instead of the garlic and thyme, (neither of which I like with potatoes,) but I think it would be very good with those alterations.

The edges of my thumbnails are black from picking an entire bunch of thyme for turkey burgers last night.

Oh, lovely. The perfect thing for my impatiently-plucked tiny, pearly potatoes. Jealous of growing olives, though. No hazelnut-fed pork can top that.

Heather: Olives not Portlandia homegrown! However, our over-the-fence neighbor has an olive tree, and I'd bet they'd be thrilled if we offered to take some.

It's very Italian I think, serving potatoes with olives, usually black though - I'll have to give this green version a go!
