This'll Fix You Up

June Gloom? Yeah, we got it bad. Showers, gray skies, fricky wind.
The mood suffers.
There is a cure for that, and it comes in many flavors. Soup.
This is sunny avgolemono soup. I saw no need to art up the photo with utensils, herbs, crockery. What you want is exactly what you're looking at: A bowl of glaringly yellow soup, tingling with lemon and substantial with rice. Eggs, chicken stock... that's food. After we finished our lunch, we couldn't get up from the table. The soup was so nourishing (and there was a little Greek salad, too).
In the old days (we're talking Pleistocene, okay?), I made up my very own recipe for avgolemono soup. How hard could it be? Whatever I came up with tasted good and was definitely satisfying.
I haven't cooked this soup in years. We have lemons to use, and it just seemed so right today. To make sure, I looked up recipes.
Turns out I was making it properly all along.

I went to Gregoire yesterday. Got their chipotle potato soup. Seemed to go with the weather.

Kailyn: That sounds perfect. Jeez, I'm gonna have to invent that. :)

We're having soup today, too - nothing else will do.

Your thought for the day: heh.

Zoomie: Perfect. I want to hear about it.

Kudzu: Hah! Heh it is, and so apt.

We have walls that colour, isn't it wonderful?

Mouse: Which room? It must be so Happy. Our walls are all China White (and isn't that heroin?). Need color.

Well, that sure is pretty! Wish you would post a recipe... ;)

Hungry: You know I won't.
Heat two cups chicken stock. Beat two eggs with juice of one lemon (or more, to taste). Ladle spoonfuls of hot stock into egg mixture to temper it; mix and add back to pot. Stir in a cup of cooked rice (don't boil). Salt, pepper. Two small servings.
:)

Soup is what's for dinner. I am in such need of an attitude adjustment.Come on summer!

Greg: It IS medicine. Even if somebody else makes it. Be happy.

Thanks for answering Hungry's request but I have a question. I assumed from the look of the soup that the rice was puréed. Not so?

cookiecrumb said...

Zoomie: No, the rice is just sunken. It's really nice to have little texture-y bites of rice in this soup.

Thanks. Even better!

Cookie, both hallways. You walk into the house and BAM, yellow :)
Every room in the house is a different colour, some chosen by us, some by others. Slowly getting rid of the ones chosen by others, it's only been 10 years afterall :)

Mouse: That's a grand entrance! We've been in this house four years; paint is still pristine. We had colored walls in the previous house, and wanted less flash. I make up for it by strewing small rugs all over the wall-to-wall carpet. Second-to-last living room rug arrived yesterday. It's a crazy quilt in there; I like it.
