Soopsoopsoopsoop

We are still having glorious weather in Northern California, but it can't stop me from a seasonal craving for soup.
I love soup.
I love eating soup, and I love making soup.
To my horrified chagrin, Cranky now loves making soup, and he does a good job of it. He didn't even like eating soup when we first met; he thought it wasn't sufficiently food-like.
And to top off the horrified chagrin, Cranky made this cream of broccoli soup with tofu! A New England born-and-raised, Red Sox lovin' man, cooking with tofu.
The soup was rich with several forms of allium, cooked with the broccoli in mere salted water. So simple. Blended with the tofu, drizzled with beautiful olive oil, and topped with some set-aside steamed florets (this was HIS idea).
Eating this soup was biological bliss; my body loved it as much as my mouth did.
And I want soup again today.
We have an almost petrifyingly petrifying idea to try out: Cream of porcini soup. Is this possible? Is it allowed? Shiver.

Just don't tell Campbell's. And don't use it to make green bean casserole for Thanksgiving!!

You have created a monster. But then again, if Cranky does all of the cooking, that gives you more quality time with the puppy. That was really your plan, wasn't it?

Whyever not? Cream of mushroom soup is classic and porcinis would just make it better. If you don't want the cream, you could sub in some yogurt for that extra little tang, too. Ooooh.

Oh My God. You are now officially beyond redemption. You've been Californicated. Tofu in everything.
ps- mushroom soup with chanterelles is Da Bomb. Add a dash or two of good sherry, a zip of Tabasco sauce and it's utterly divine.

Kudzu: We are having good luck with "fake" flour for thickening. I just might make that green bean casserole! (Ooh! With chanterelles.)

And, yes. Puppy time!!

Biggles: Bacon would be really perfect in there. Drat!

Zia: "Soup" is such a dopy food category, but -- it IS the best food.

Zoomie: Well! We did it today. About $12 of porcini with some chicken broth, shallots, a bit of tofu and tons of butter. Oh yeah. It was good.

Nancy: I know. Doomded. Unretrievable. Thank goodness we have a local maker of stellar fresh tofu. (Even so, I think the stuff in the cardboard box is just fine.)
I'm with you on the sherry; never would have thought of Tabasco. I often grate nutmeg into mushroom soup... xx

Your beloved is very adventurous! The day my husband cooks with tofu, I will have to call Special Agents, an alien is in his place for sure!

BWitch: The good part is we only use half the tofu in one soup recipe, and then we have to invent another soup to use up the rest.
He's in the kitchen right now making Tamari-Sweet Potato soup with shallots, kale, and... tofu.
