Hmmmhmmmhmmm... (you hadda be there)

That's a whole-wheat, butter and cream crust stuffed with roasted sliced potatoes, caramelized onions and chopped Cowgirl Creamery Farallon cheese. Major. Still moaning.
Oh, wait. Salt. Chile flakes. Chopped sage.
OK, that's all.
Wait. Still moaning.
Mmmmhmmhhmm.

I've been on a wheat free diet the last 4 months (lost 3 stone, i have no idea what that is in American) but that bad boy may have me back on it quick sharp....man that looks good.

The whole-wheat crust was succulent! A much better use of whole wheat than bread.
It's the next day, and the house still smells oniony. Mm.

Oh gosh, Jennifer. No recipe. But here's what I did. One piecrust made with whole wheat instead of white flour. Pinch of salt. The usual butter, cut in with fork. Add one Tbsp. cream (or a tad more) and moosh into a ball; refrigerate until ready.
Then, slice "enough" peeled new potatoes to make a layer in the pie pan, and roast them (oiled) on a sheet in the oven until they take on a tinge of color. Meanwhile, slice an onion (halve it, then make "half rings") and gently caramelize it in a saute pan with oil until fragrant and brown; this takes a while.
OK, assemble. Roll out the crust or simply press it into the pan with your fingers like a graham-cracker crust. Potatoes go in first, sprinkled with some seasonings (chopped fresh sage, salt, chile flakes). Onions next. Top this with one disk of CC Farallon cheese, cut into pieces. Bake at 350 for about 30 minutes or until you're all twitchy and drooling.

Ooh, I'll have to try that one. We used the Farallon for this pie because the Cowgirls had done a food pairing, and decided it was good with onions!

Yup, I had a terible job last year and lived on pizza and Indian takeaways. I quit the job, stopped eating bread and pasta. Started walking places.

I have been denying myself bread..though I am introducing it back into my diet a bit over the last couple of days...there's an very good bakery near my work that has been taunting me for months...

We've been off wheat for almost all of August. Hubster devoured a plate of pasta and several slices of bread at a cheater's lunch a couple of weeks ago, and it put him to sleep. So, yeah, take it easy.
We're talking about what the first meal of September should be, and it's looking like Mexican.

The picture was almost enough to make me give up low carb. Then I realized that although I didn't lost 42 pounds in 4 months, I did lose 35 pounds in 6 months and have kept it off for a year now. So I'm sticking with low carb. The whole wheat crust is something I could incorporate though, but I would have to fill it with something else. Still, it's fun to look.
