Sandwich and Two #Hashes

I thought the brisket we corned last week was going to end up too small for multiple leftovers.
What would I want more, hash or a sandwich? (Because I like almost all slabs of meat best in leftovers. But we seriously devoured slices of the delicious protein on day one.)
It turns out there's enough meat left for both.
Out of habit, I went for the sandwich first. Hash still a'comin'.
You got an opinion about those deli sandwiches with three-inch stacks of juicy, paper-thin meat? Yeah. Stupid. You can't put your mouth around that, and Nobody should be eating that much animal product at one meal.
So we cut the meat thinnish and piled it only a couple of layers thick. Mustard. Rye bread. Full stop.
Full belly.
Very satisfying, and now I'm ready to move on to the hash.
Whoops, there's enough meat left for Two more meals. Two more corned-beef leftover meals? Joyous dilemma. Another sandwich and a hash? Two hashes?
(Two hashes.)

I think I'd have piled the cole slaw in that sammie, too. Either way, it looks like what I wish I was having for dinner.

Nancy: Brilliant timing on that, and frugal! I've never gone with the beets. Too afraid it would all turn pink.

Zoomie: Believe it or not, today I Googled images of CB sandwiches, and there was one (but only one) with the cole slaw inside.
Cranky asked me if I would ever do that. I said I would, but I wouldn't talk about it.

Reubens are very trendy in Sydney at the moment. I paid serious money for one the other day, it was delicious! Great fats slabs of meat :)

Mouse: Well, Reubens have something like Thousand Island dressing, and... sauerkraut? Oh, and cheese! Fabulous sandwich. But this is the impoverished stepchild. (Grandparent, actually.) Very plain and still so satisfying.
I'll make you one.

I'm jealous because we did not have enough for leftovers to make sandwiches....but then that gives me an excuse to make corned beef again this week right?

Simply: Are you feeding a lot of mouths? It's just the two of us here, and the brisket was two and a half pounds.
Totally you should do another one! Whoo.

You could do a riff on stuffed cabbage with the leftover corned beef (maybe with some potatoes), top with a lovely swiss cheese sauce (or fonduta if you want to be fancy), could be yum! But then again a poached egg over some hash sounds like a mighty tasty too. Think it's time to work on our own dinner!

No, we're not feeding multiples anymore, until the 3 still in college come home. Here's what I THINK happened: The hubby came back from the store with a smaller than usual brisket and more than usual Guinness draft.

While contemplating how much LESS Guinness to throw in the crock pot with a smaller brisket, I drank a Guinness and the hubby drank a Guinness. Then we each drank another to salute St. Paddy's day.

I then poured Guinness in the crock pot and proceeded to start making my Irish soda bread.

My hubby wandered back in during the baking process and discovered we still had Guinness left in the refrigerator. He said that was a travesty on such a holiday...and poured out more Guinness. At least I THINK this is what happened.

All I know is we didn't have any left over brisket, soda bread or Guinness and I don't remember much else.

Simply: GREAT story. Ha ha! If I drank a bunch of Guinness, I probably wouldn't want to eat at all. Are there dogs? Prowlers? Neighbors? Too funny.

Undercover: You have my sympathy and my admiration. I'd have gone that route too. (But having had the sandwich, I gotta say I'm glad I didn't need to skip it.)
