Eat Pretty, It's Good For You

I know, it's just lunch.
But look. It looks like spring, and I could use some spring.
Best thing, this all came out of the refrigerator, totally unplanned. You know how you get ideas for meals, and you back up your fridge space with things you're not quite ready to cook? Well, I do.
But this was a bunch of leftovers and regular staples. Ad hoc.
It's a fancy quesadilla. I wish you would make one of these. So damn yummy.
Believe it or not, the guacamole was leftover. Whoever has leftover guacamole, and did I call the doctor?
Naw, this was just lucky. Melted cheese between two flour tortillas. Topped with that green gunk, and a fresh salsa made from backyard tomatoes and whatever else goes in there. So pretty.
It's almost October and my mood is NOT crashing.

You know, back in the day when I refused point blank to eat tomato or cheese, my mum (terribly indulgent, spoiled me rotten yes I know) used to make my 'pizza' with avocado as the base!
My pizzas were prettier than the others :)

Love the idea of a quesadilla covered with stuff - must try this one for sure -and soon, while the 'maters are still tasty.

Mouse: Your mom is beyond wonderful. My mom never even made pizza. But I didn't have a problem eating whatever she served. Tater Tots. Canned ravioli. Heh.
Boobtober?? Never even heard of it. I wish I could walk around with my boobs out; at my age they are totally perky and probably my best feature. I'd be a movie star. Don't try bringing up Butttober.

Zoomie: It was just such a joyful meal. I'm pleased that you will give it a try. FYI, we used goat Cheddar. Jesus.

What a gorgeous photo! I do something similar except that I cheat. A couple of the local taco places sell their salsa to go and hand made tortillas as well. I buy both, take them home and put them together my way but without the cheese or the beans. I am trying to cut back on carbs so no rice either (sob! ). But home made salsa and hand patted tortillas - HEAVENLY! Thanks for the reminder - I'm out of both and need to go and replenish the cupboard.

Greg: I don't even think of it as eating healthy. Some nights I eat a bag of potato chips. But my instinct is for healthy. And pretty.

Dog: You should come up here and raid my fridge. Fun.

Nancy: I would cut out rice, but never beans. Go shopping!

I eat kitchen sink quesadillas at least once a week. At least. It's just a zhuzhed-up grilled cheese sammich, I tells ya!

Glad to hear all this "let's eat what we have and what we want". Since I have been a singleton for some time now (after years of doing family and husband feeding) I still delight in it. Last night, because I had eaten a substantial and delicious Korean lunch, I was satisfied with cheese, crackers, and an apple. I say we should eat exactly what "calls" us. Good for you. The quesadilla was great-looking and so photogenic.

Kudzu: A couple of months ago I realized I was victimized by this blog. I either had to cook spectacular stuff (which I seldom do) or go deep-secret on the Doritos. Now I'm honest, and honestly eating better.
Wait till you see what's next, though!!!!
