Also, fail to notice, when you are taking the picture, that congealed, fried meat-juice flap on top.
I probably ate it.

YOu know, I am making pork chops tonight. I just might do them in butter. Is that red cabbage I see? love it.
Oh, Dog, try the butter. Its low burn point will keep you from overheating the meat, and the flavor is incomparable. I'm a million years old, and I've never tasted them this way before.
(Yes! Gently braised red cabbage with little pear chunks and onion, some champagne, flavors of your choosing.)
I bags the crispy meat juice bit! I ate cabbage tonight, balklan cabbage.

I'll have to try this... I've always used equal parts butter and olive oil, but butter gives such a nice color to everything cooked in it.

Zoomie: By "diet" I just meant my usual graze, which doesn't include many slabs of meat. Merely a personal preference. (And by leaving out slabs of meat, my diet has more room for butter!)
