YOu know, I am making pork chops tonight. I just might do them in butter. Is that red cabbage I see? love it.
Oh, Dog, try the butter. Its low burn point will keep you from overheating the meat, and the flavor is incomparable. I'm a million years old, and I've never tasted them this way before.(Yes! Gently braised red cabbage with little pear chunks and onion, some champagne, flavors of your choosing.)

I'll have to try this... I've always used equal parts butter and olive oil, but butter gives such a nice color to everything cooked in it. Ps... where's ipuppy?
