Aaack! I am stuffed silly.
I've been eating vast quantities of nourishing, warming winter food: soups, stews, cassoulets, polentas, sausages, potatoes, cabbage...
I am full.
Yesterday I needed a salad. Just a simple salad.
Cranky trimmed some baby hearts of Romaine lettuce, and whipped up a blue cheese/ranch dressing (you mix some sour cream into some buttermilk, and crumble in the blue cheese; salt and pepper, dried herbs if you insist, and that's it).
You wouldn't think a simple salad would fill you up, but it was a good plateful and I ate every bite.

That sounds SO GOOD right now! I made an enormous batch of mac and cheese. So very tired of eating it...
we've been stuffing ourselves silly with salad for weeks. I'm now wondering if your dressing would be just as nice with some lovely goat or sheep fetta.
I also had a craving for salad yesterday - mine was just romaine lettuce, grape tomatoes, black olives and a little feta cheese crumbled on top. Olive oil and lemon juice. The time between Thanksgiving and Christmas calls for moderation :-)
Amy: Sometimes you gotta cut the fat with some raw foliage!
I used to make huge casseroles, and dreaded the leftovers. Then I started making one-meal-only casseroles, and missed the leftovers. :)
Mouse: Of course you can use whatever lovely cheese you like. It won't have that burny blue zing, then, and just as well.
Bewitch: Lemon on salad is required by the salad police. Lovely. (Moderation. Hah! I'm actually in "training" to have a good enough appetite for Christmas.)
Got to have a salad. It's on my honey's required list.
Greg: If you listen, your body will tell you what it needs. You have to develop that "ear." (Mine's telling me I need caviar pretty soon.)
Love the snow drift dressing on the Romaine! Nice salad. And may I say I am so enjoying those sub-heads as you change them....way cool.

I can so relate to the desire for just some simple salad. I know I'm overdoing it on the rich food when I start craving that!
