First, do a quick soak: Boil some water, dump the beans in, and boil for a minute. Off heat, put the lid on and leave them for an hour. I like to cook beans in the soaking water, for about an hour and 45 minutes (depending on the variety of bean). Always add a bay leaf to the pot. No acids at all.
